Mini Sausage Quiche

These bite-size quiche are so versatile you can serve them for breakfast, lunch or dinner! Make a batch to freeze and pull them out for a grab-and-go breakfast, a holiday buffet or as a quick-and-easy appetizer.

Ingredients

  • 2 pre-made pie crusts
  • 1 cup(s) milk
  • 1/2 cup(s) heavy cream
  • 3 large eggs
  • 1 lb(s) sharp cheddar cheese, cut into 1/2-inch cubes
  • 1/2 chorizo sausage, cut into 1/2-inch cubes
  • 1/2 red bell pepper, cut into 1/4-inch slices
  • 1/2 green bell pepper, cut into 1/4-inch slices

Instructions

Roll out pre-made pie crusts. Using a glass or cookie cutter, cut out 24 rounds big enough to fit into a mini muffin pan. Place individual rounds into muffin pan. Fill each crust with 1 cube of chorizo, 1 cube of cheese, 1 slice of red pepper, and 1 slice of green pepper. Set aside. In a bowl, beat eggs; then add milk, cream, salt and pepper. Fill each crust 3/4 full of egg mixture. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean. Let them sit for 5 minutes, then transfer to a cooling rack.
