Sweet Potato Fries With Marshmallow Dip

I've attempted these fries multiple times with the same result...soggy, limp fries. I was texting a friend and happened to mention that I was frustrated after another failed attempt. She told me her huband makes sweet potato fries for her all the time. A couple minutes later I received another text with his directions for double frying. Finally, sucess! I decided to try a marshmallow dip and serve sweet potato fries at my Thanksgiving Happy Hour.
