Skinny Pumpkin Smoothie

The idea to do a pumpkin smoothie was more or less out of curiosity. Would we like it, since it is minimally sweetened? Would we be okay with raw pumpkin? Would we like the texture? As it turns out, it was an enthusiastic 'yes' to all. Give it a try! We figured on the calories for this drink around 150. Go splurge!

Ingredients

  • 1/2 cup(s) canned pumpkin (not pumpkin pie filling)
  • 3/4 to 1 cup(s) milk or nonfat vanilla almond milk
  • 1/2 cup(s) nonfat Greek yogurt
  • 1 tbsp(s) pure maple syrup
  • 1 small frozen banana
  • 1 splash pure vanilla extract
  • 1 tsp(s) pumpkin pie spice
  • cinnamon or nutmeg (optional)

Instructions

Add all ingredients (except optional cinnamon or nutmeg) to a blender and pulse until combined. Pour into a glass and sprinkle a bit of cinnamon or nutmeg. If you prefer a thicker drink, go with the 3/4 cup milk. If you prefer your smoothie bit on the frosty side, replace about 1/4 cup of the milk with a couple of ice cubes.
