- 6 fresh mint leaves (plus a few more for garnish)
- 1 1/2 tbsp(s) Simple Syrup
- 1 1/2 tbsp(s) fresh-squeezed lime (about 1/2 of a lime)
- 2 oz light rum
- 2 oz Club soda or sparkling spring water
Muddle mint leaves, syrup and lime juice. You can do this with the back of a spoon to mash the mint a bit if you don't have a muddler.
Add a cup full of crushed ice to a glass, then add the rum and water. Stir and serve with a few mint leaves as garnish.
