Carrot Bran Muffins

This recipe has been in my family for a long time. My mom received many requests for these muffins from family, friends and neighbors.

Ingredients

  • 2 cup(s) flour
  • 2 cup(s) oat bran
  • 4 tsp(s) baking soda
  • 2 tsp(s) baking powder
  • 1 tsp(s) salt
  • 4 tsp(s) cinnamon
  • 2 cup(s) brown sugar
  • 4 apples, peeled and shredded
  • 3 cup(s) carrots, peeled and shredded
  • 1 cup(s) raisins
  • 1 cup(s) milk
  • 1/2 cup(s) oil
  • 4 large eggs
  • 2 tsp(s) vanilla

Instructions

1. Blend together flour, oat bran, baking soda, baking powder, salt, cinnamon and brown sugar. Mix well. Make a well in the dry ingredients and mix in apples, carrots and raisins.

2. Mix together milk, oil, eggs, and vanilla. Add to the dry ingredients. Mix until all ingredients are incorporated.

3. Divide batter into 24 greased muffin cups. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted comes out clean.
