Muffin Tin Pancakes

I'm a lazy cook when it comes to breakfast. Sleep is precious and the thought of getting up early to cook a warm breakfast, well, that's just never going to happen. I'm all about grab 'n' go. I saw muffin tin recipes on Pinterest and thought this was a great way to save time by making one big batch of individual pancakes with varied ingredients. My personal favorite is banana, peanut butter and maple syrup. Take the extras to work for co-workers!

Ingredients

  • 2 cup(s) Bisquick
  • 2 tsp(s) baking powder
  • 3 tbsp(s) sugar
  • 1 cup(s) milk
  • 2 large eggs
  • 2 tbsp(s) vegetable oil
  • 1 tsp(s) vanilla
  • Toppings: berries, bananas, peanut butter, maple syrup, bacon, sausage

Instructions

1. Prepare 18 muffin tins with cupcake wrappers.
2. Combine all pancake ingredients until blended.
3. Top with desired ingredient, pushing some into the batter.
4. Bake until inserted toothpick comes out clean.
