- 1/2 lb(s) ground beef
- 1/2 cup(s) chopped onion
- 1 clove(s) minced garlic
- 1/2 cup(s) chopped green pepper
- 1 can(s) corn, drained
- 1 can(s) kidney beans, drained
- 2 8-ounce can(s) tomato sauce
- 1 small can(s) sliced black olives, drained
- 3 tbsp(s) salsa
- 2 tsp(s) chili powder
- 1 cup(s) yellow cornmeal
- 2 1/2 cup(s) water
- 1/4 tsp(s) salt
- 1/2 cup(s) cheddar cheese
Preheat oven to 375 degrees.
In a large skillet, brown ground beef, onions and garlic; then drain the fat. Add peppers, corn, kidney beans, tomato sauce, olives, salsa and chili powder. Pour into a 10 x 10-inch greased baking dish.
In a medium sauce pan combine cornmeal, water and salt. Bring to a boil, stirring constantly, and continue cooking until it thickens slightly. Spoon cornmeal over ground beef mixture.
Bake at 375 degrees for 45 minutes. Remove from oven and sprinkle with cheese. Return to oven and bake for 15 more minutes.
