Cherry Chocolate Oatmeal Cookies

There is nothing not to love about this cookie! The recipe may look quite familiar, as far as oatmeal cookies go, but it's the combination of the dried cherries, walnuts and chocolate chips that make it a keeper! Enjoy with a glass of milk or a cup of hot tea. Who needs to wait for the holidays anyway.

Ingredients

  • 2 stick(s) butter (1 cup)
  • 1/2 cup(s) sugar
  • 1/2 cup(s) brown sugar
  • 1 tsp(s) vanilla
  • 2 eggs
  • 1 tsp(s) baking soda
  • 1 1/2 cup(s) unbleached all-purpose flour
  • 3 cup(s) oats
  • 1/2 tsp(s) salt
  • 1 cup(s) semisweet chocolate chips
  • 1 cup(s) dried cherries
  • 1 cup(s) walnut pieces, chopped

Instructions

Preheat oven for 350 degrees.

In a mixing bowl, whip butter and sugars until creamy. Add vanilla and eggs, and mix until combined. Add flour, soda, salt, then oats 1 cup at time. Gently stir in chocolate, cherries and walnuts. Drop by heaping teaspoon on ungreased cookie sheet about 2 inches apart.

Bake 15-18 minutes until lightly browned. Enjoy!
