White Chocolate, Cranberry, Oatmeal Cookies

These extra large cookies bring back fond memories of Christmas with my family. Although they are great any time of year, the red cranberries add a nice touch to the holiday buffet table.

Ingredients

  • 1 1/2 cup(s) flour
  • 1 tsp(s) baking soda
  • 1 1/2 tsp(s) cinnamon
  • 1/2 tsp(s) salt
  • 1 cup(s) butter
  • 1/2 cup(s) sugar
  • 1/2 cup(s) brown sugar
  • 2 eggs
  • 1 tsp(s) vanilla
  • 3 cup(s) oatmeal
  • 1 cup(s) dried cranberries
  • 1 cup(s) white chocolate chips

Instructions

Combine flour, baking soda, cinnamon, and salt. In a mixing bowl, beat butter and sugars until fluffly. Add eggs and vanilla, beat for 1 minute. On low speed, gradually beat in flour mixture. Stir in oats, cranberries, and white chocolate chips. On an ungreased cookie sheet, drop 1/4 cup spaced 3 inches apart. Bake at 350 degrees for 15-18 minutes or until brown, but still moist on top. Place on rack to cool.
