Baked Salmon over Salad

It just doesn't get easier (or tastier) than this! Baked salmon in 30 minutes and ready for your salad. The perfect superfood meal! I love that clean up is quick, and if you are really running short on time, stop by the salad bar when you pick up your salmon for all your pre-cut veggies. Yup, now that is convenient!

  • Prep Time: 5 mins
  • Cook Time: 30 mins
  • Servings: 1

Ingredients

  • 1/4 lb(s) fresh salmon from the seafood deli
  • 1 small lemon
  • 1 tbsp(s) butter or olive oil works well too
  • salt and pepper
  • fixings for 1 serving of salad

Instructions

Cut 3 slices from your lemon and lay on a piece of foil. Place salmon on top. Place butter in 2 thin slices on top of the salmon along with your salt and pepper. Or, if using olive oil, about a tsp with salt and pepper.

Seal the foil around the salmon tightly and bake for 25 min in a 300-degree oven. Open the foil after 25 minutes and place under the broiler for several min. until lightly browned. Allow to cool for several minutes before serving over salad. Enjoy!
