6 Ingredient Pasta Salad

This is a great recipe if you like to prep some pasta and keep in the fridge just for times when there is no energy or desire to cook, but you want a satisfying and healthy meal for one. Don't have arugula on hand? No problem, substitute some fresh spinach instead! The great thing about a simple pasta salad is that you can make it unique with ingredients you have on hand. A good Italian dressing is the key!

Ingredients

  • 1 1/2 cup(s) cold, cooked pasta
  • 1 small handful(s) fresh arugula
  • 1 small handful(s) cherry tomatoes, sliced in half
  • 1/2 cup(s) black olives, sliced
  • 1/4 cup(s) part-skim mozzarella cheese, cubed
  • 2 tbsp(s) Italian dressing

Instructions

Mix together until Italian dressing has coated all. Enjoy with some crusty warmed French bread.
