Quick and Easy Fettucine Alfredo

Truly made for oneliness--a pasta dish with only one pan to clean up! Serves 2 unless you are really hungry so plan on having an appetite or share this dish. Adapted from number-2-pencil.com, this recipe has been "lightened" up but could be lightened more...see our tip at the end of this recipe!

Ingredients

  • 1 cup(s) half and half
  • 1 cup(s) water
  • 2 tbsp(s) butter
  • 1 clove(s) garlic, peeled
  • 1/2 tsp(s) salt
  • pepper to taste
  • 4 oz fettuccine dry pasta, uncooked
  • 1 cup(s) Parmesan cheese, shredded

Tips and Suggestions

Reduce the calories even more...substitute evaporated milk for the half and half.

Instructions

Combine half and half, water, butter, garlic, salt and pepper. Bring to a boil. Add pasta and reduce heat. Simmer, covered for 15 min. Remove from heat, stir in cheese, and serve with a little grated Parmesan and parsley flakes on top.
