Greek Salad

I container garden--there is just not much space otherwise. This year I got two volunteer tomato plants from last year that is giving me an abundance of tomatoes. Cucumbers and bell pepper are following suit. What do you do with all these veggies? Make a Greek Salad of course! A quick and simple way of enjoying a fabulous salad for yourself.

Ingredients

  • 2 small handfuls of chopped romaine
  • 1 ripe plum or vine ripe tomato cut into cubes
  • 1/3 of a small cucumber, seedless
  • 1/4 small red onion, sliced
  • 1/2 small green bell pepper, sliced
  • 1 tbsp(s) peppercinis, chopped
  • 1/4 cup(s) kalamata olives, pitted
  • 1/3 cup(s) feta cheese crumbles
  • oregano, salt and pepper
  • olive oil and balsamic vinegar

Instructions

Take a plate and lay your rinsed, chopped romaine lettuce. Layer the rest of the ingredients onto your lettuce and end with the feta cheese in the center. Add desired amount of oregano, salt and pepper. Cover and refrigerate until ready to eat. Add a drizzle of olive oil and balsamic vinegar before enjoying!
