Select and clean a high-starch potato. Slice the potato into wedges. Place the wedges into hot oil. Fry until the starch starts to raise. Remove from oil. Increase the temperature of the oil and place the potatoes back into the oil. Fry until golden brown. Remove from oil, and salt and pepper to taste.
In a bowl, mix together crushed garlic and feta cheese. Once blended, place on top of the hot chips.
