Creamy Mushroom Soup

It's not a typo. This thick, creamy mushroom soup is over the top with paprika and dill. It's reminiscent of stroganoff in a bowl. Add some stew meat and turn this into beef stroganoff soup.

Ingredients

  • 6 tbsp(s) butter
  • 1 1/2 cup(s) onion, chopped
  • 4 tsp(s) paprika
  • 4 tsp(s) dried dill weed
  • 1 tsp(s) salt
  • 1 tsp(s) pepper
  • 1/2 cup(s) flour
  • 1 2/3 cup(s) milk
  • 2 2/3 cup(s) water
  • 4 cup(s) mushrooms, sliced
  • 2 tbsp(s) soy sauce
  • 2 tbsp(s) lemon juice
  • 1/2 cup(s) sour cream
  • 3 tbsp(s) parsley, chopped

Instructions

1. In a large pot, melt butter and sauté onion along with paprika, dill weed, salt and pepper until onion is tender.
2. Whisk in the flour.
3. Whisk in milk and water.
4. Add the mushrooms and bring to a boil. Reduce heat and simmer about 30 minutes, stirring occasionally.
5. Remove from heat and stir in soy sauce, lemon juice, sour cream and parsley.
