This recipe can be made up and baked in mini silicone molds such as muffin shaped. I like the Wilton Square silicone baking sheet. It makes 24 squares although I only got about 20 squares from this recipe. Still, the cleanup was a breeze!
Although not necessary, I do love using my KitchenAid for this recipe. If you have one, simply add all ingredients and pulse several times to break up the chicken and rice and combine all ingredients. If not, mash the rice and add in the finely diced chicken. Then mix in the rest of the ingredients.
Add by spoonful to your mini silicone mold. If you don't have one, just drop by rounded tablespoonfuls onto a lined cookie sheet with parchment paper.
Bake at 350 degrees for 35-40 min or until lightly browned. Remove and cool. Store in an airtight container or Ziploc bag in the refrigerator.
